Job Description

Position Reports to: Culinary Director/Director of Culinary Cost      Tasks and duties: Manage administration responsibilities, including incoming and outgoing mail, email, ensuring a smooth information flow and maintaining the order of the department; Manage the Culinary Team Calendar Answer a wide variety of inquiries from chefs and sous chefs, Supplier-Partners, etc, both in person, over the telephone and via e-mail, responding with the appropriate correspondence; Be the technological hands of the chefs - support Executive Chefs to file updates for mise en place, ordering sheets, new menus, menu descriptions and recipe files. Review all designed menus drafts for updates. Maintain and update regularly filing system as required for correspondence, policies, standards, regulations, contact information and various applications Report status of kitchen and completion of SOPs through spot checking lists. Track waste lists, weekly and monthly inventories, food tracker and cleaning schedules. Monitor maintenance requests on asset tracking systems and act as liaison between chefs and maintenance department. Support chefs ordering supplies Help with printing training material for management Upkeep all BOH signage. Assist department in completing projects as required Alert Corporate Chef and Culinary Administrator of all status reports, issues, or in-contingencies. Keep the department running efficiently in absence of the Culinary Director or Administrator Physical Demands The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting, standing, for 4 to 8 hours, bending, and moving intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.
