In this full-time role, you will be responsible for overseeing all retail, food and beverage operations at our historic castle in Leigh Creek, Victoria, 10 minutes from Ballarat CBD.This is not a back-office role. We are looking for a dynamic, on-the-ground operatorsomeone who can take full ownership of Kryal Castles F&B and Retail operations as if running a hospitality venue with a small business mindset.You will be responsible for all day-to-day operations across food outlets, bars, function and event catering, retail outlets, and stock management. A strong focus on customer experience, maximising sales, and event and function growth is essential.What you''ll be doingLead, train and manage the Food and Beverage and Retail staff to deliver exceptional customer serviceBe physically present on-site during peak periods (weekends and school holidays)Act as venue manager during weekend trade, including operating and overseeing the on-site retail outlets, cafes and restaurants, as well as event nights and private functions (weddings, feast nights)Develop and implement strategies to maximise revenue and profitability of all food, beverage and retail products and serviceManage stock control, inventory and ordering processes for food, beverages and retail productsManage and monitor budgets, forecasts and key performance indicators for your departments, and track and report on key metricsDevelop and implement initiatives to drive revenue, increase margins, and reduce costsEnsure compliance with all relevant food safety, liquor licensing and other regulatory requirementsFoster a positive, customer-focused culture within your teamWhat we''re looking forSignificant experience in a retail, food and beverage management role, ideally within the hospitality or tourism industry, with hands-on operational experienceProven track record of driving sales, profitability and operational excellence in a customer-focused environmentStrong financial management skills and the ability to interpret data to inform business decisionsExcellent leadership, people management and team-building capabilitiesIn-depth knowledge of food safety regulations, liquor licensing and other relevant legislative requirementsTertiary qualifications in hospitality management, business or a related field are highly regardedThis is an on-your-feet role, and candidates must be available to work during our operating hours on weekends and school holidays as part of your regular roster.What We OfferUnique work environment in one of Australias most iconic entertainment venuesOpportunity to innovate and have real ownership over retail and F&B strategyCollaborative, fast-paced, and entrepreneurial team cultureGrowth opportunities as the Castle expands into new experiences and productsAbout usKryal Castle is a unique tourist attraction in the Ballarat region welcoming over 100,000 guests annually.
